Granola Recipe

I started making our own granola about 5 years ago and it has become a staple in our house. I started off with an awesome recipe from Soulemama which she had posted from one of my now favourite cook books Feeding The Whole Family by Cynthia Lair. Over the years I've tweaked that recipe until it slowly became my own.

We eat this granola at least a couple mornings a week and pair it with our homemade yogurt and fruit sauce.

Another bonus for our zero waste journey is you can buy most or all of the ingredients in bulk thus reducing your packaging waste.

 

 

Ingredients

2 cups Rolled Oats

1/4 cup pumpkin seeds

1/4 cup sunflower seeds 

1/4 cup coconut

1/4 cup chopped cashews

1 tablespoon chia seeds

1 tablespoon hemp hearts

3/4 cup wholewheat flour

1/2 teaspoon cinnamon

pinch of sea salt

1 orange

1/4 cup coconut oil 

1/4 cup maple syrup

3/4 tsp vanilla

1/4 tsp almond extract

A handful or two of dried cranberries

 

Preheat oven to 300 degrees farenheight. Grease pan with coconut oil.

In a large mixing bowl combine oats,pumpkin seeds,sunflower seeds,coconut,cashews,chia seeds,hemp hearts,wholewheat flour,cinnamon,sea salt,and zest of orange.

Juice orange and set aside.

In a small pot melt coconut oil. Add maple syrup, juice from the orange and stir. Remove from heat and add vanilla and almond extract, stir.

Slowly pour wet ingredients over dry ingredients and stir to combine.

 Spread on a cookie sheet and place in oven and bake till golden. 45-60 min. While baking stir your granola every 15 min till the 45 min mark then check on it every 5 min so you don't over cook it. 

Once cooked add 1-2 small handfuls of dried cranberries and stir.

Enjoy!

Store in an airtight jar.
